Sunny Lam

Born and raised in Oakland, Sunny Lam attended the University of California, Davis where he received his Bachelor of Arts degree in Technoculture. Sunny was classically trained in San Francisco as a craft bartender and spent several years of his hospitality career bartending at multiple locations throughout the South Bay. After three years of building a reputation as a creative, devilishly quick, and stylish bartender, Sunny made the jump to management in 2017 and accepted a position as a Food and Beverage Manager. After a successful year in the position, Sunny was offered a role as General Manager/Beverage Director for the opening team of Hock+Hoof in DTLA. 

After creating a winning bar program focused on beer, wine, and soju for Hock+Hoof, Sunny took a step back from management to get back behind the stick as a bartender. He worked at a number of different bars all over Los Angeles, including Here & Now, a bar that was included twice consecutively in EaterLA's “Top 12 Bars in LA” as well as Esquire's “Best Bars of Summer 2019.” In 2021, Sunny moved back to The Bay Area where he joined the Viridian bar team before being promoted to Lead Bartender.

Sunny’s time bartending in Southern California gave him a healthy appreciation for all things agave, and he now has a new-found, veteran's understanding of hospitality. Bartending, cocktails, and hospitality are not his only passions, however; Sunny is currently pursuing a career in helicopter aviation and also has a taste for adventure, culture, media, music, and travel. At the age of twenty-six, he flew around the world and has since then visited numerous countries. Sunny is also passionate about photography, cinematography, and outdoor adventures, such as exploring nature, kayaking, and wilderness survival. 

gavin dacumos

Gavin Dacumos comes to us with extensive hospitality experience in multiple key industry roles. Before joining the team, Gavin managed Mockingbird in Oakland and bartended throughout the Bay Area at reputable cocktail bars and restaurants such as Top Hatters Kitchen and Bar, Low Bar, Lemon Drop, and Dawn Club. Open-minded, respectful, cheerful, and always willing to lend Viridian a helping hand, Gavin’s natural talent, exceptional service skills, and instinct for anticipating guests’ needs never fails to impress us.

ken kawachi

Ken Kawachi’s multi-faceted career has seen him in a variety of roles, including as a Barista at Blue Bottle Coffee, “Tea Geek” at a boba shop in Hayes Valley, a Server and Host at Namu Gaji, a Barista and Food Runner at Sunday at the Museum, Barback at Churchill and Anina, Barback and Bartender at True Laurel, Bar Prep and Barback at Pacific Cocktail Haven, and Bartender at Members Only and Cavaña. Before joining our team, Ken was a welcome and familiar face at Viridian, often dropping by for a nightcap after work on his way home. Upon hearing of an opening at Viridian, Ken jumped on the chance, and the rest is history. Curious, intelligent and constantly looking for ways to learn and excel, Ken never fails to give his utmost support to Viridian. Drop by to pick his brain about cocktails or anything Dungeons & Dragons. This Dungeon Master has all the best stories to tell!

Q BOLAN, JR.

The backbone of the prep team, Q spends his mornings making the behind-the-scenes cocktail magic happen at Viridian. Many of the bespoke ingredients featured in our beverage program are processed and prepared by Q with careful attention to detail and advanced culinary techniques. Beyond the preparation of these critical components, Q also batches, blends, and quality tests our seasonal menu items, ensuring their speedy and optimal delivery by those who execute the last steps of their final presentation. Q can be found slinging drinks at Modernist in San Francisco on the weekends or coaching high school basketball in the evenings. A former Division I college basketball player, Q is a proven and tenacious athlete, helping lead his high school to the top-tier of both state and national rankings. Before joining the team at Viridian, Q tended bar at Hakkasan SF and Hello Stranger in Oakland.

manveen kaur

A positive, free-spirited, and optimistic individual, Manveen Kaur’s contagious smile and quick wit make her a natural fit for the hospitality industry. Her friendly and energetic demeanor are only matched by her vast operational experience and aptitude for providing memorable guest experiences. Manveen’s impressive past roles have seen her as Lead Bartender of Dirty Water, Bartender and Floor Manager at Barlago, Bartender at 1760, Lead Bartender at Crustacean’s, Bartender at Temple, Manager of Novela, Manager of Miller & Lux, and Bar Manager of Michelin-starred restaurant Commis. Ambitious and multi-talented, Manveen is also currently working toward her Real Estate License.

Genuine, thoughtful, and considerate are all words that come to mind to those who are lucky enough to know Luis Salazar. And with his meticulous eye for beauty, art, and craft, Luis is a natural at styling visually stunning cocktails. Not only a bartender, Luis also spent many years in hospitality leading others and cooking professionally in some of the Bay Area’s most well-known restaurants. Despite already being established in the culinary world, Luis decided to also pursue bartending and dive deeper into Front of House roles such as serving, hosting, and barbacking. We are proud to be one of many exciting chapters in Luis’s hospitality journey as we follow his rapid growth from strength to strength. Away from work, Luis enjoys runs around the lake, working out, training in Muay Thai, rocking out on his guitar, and continuing to build upon his already expert-level knowledge of cars. One day, Luis dreams of producing his own spirits and owning a distillery in Mexico.

kat parsons

Although the newest member of our team, Kat Parsons is a well-known and respected individual within the San Francisco Bay Area bar community. Highlights of her career include bar managing at American Oak and bartending at Rye and The Double Standard. Winsome with a heart of gold, Kat is charming, funny, kind, and considerate of her co-workers while also being the consummate professional. Team-focused, inquisitive, and always on the journey to expand her skills, Viridian is proud to be called a second home to this seasoned member of the industry. An avid baker who loves to make others happy, Kat also enjoys relaxing walks with her dog and competing in bartending events.
